Warmth winter with veggies - Mix vegetables soup




Hi,
Everyone,

This year is going away and  chilled winter  is  knocking  our door. On the last day of 2016.. I need  a bowl of  soup  to  warmth  myself  in this chill night.
I am  planning  to  make  something  healthier rich  easy  comfort  dish.. Mix  vegetables soup..
This  soup is  loaded with  lots of  veggies..like  carrot,  beans, mushrooms, cabbage, paneer, cheese, spring onion,  ginger,  garlic  and  beetroot and  seasoned  with  salt and pepper make it  wholesome  power  pack  meal.
This  is  very  easy  to make  and good  for  winter.
 You  can  make this simple  and tasty yummy  soup  in a few minutes.
I have  used whatever  veggies I have in my kitchen  pantry. You can  make  by  your  choice  by  adding more  veggies.
A real  warming  soup  make  you  more  energetic  and  healthy  too.

Mix  vegetables soup -



Mix  vegetables soup -


Preparation  time  : 10 minutes
Cooking time : 10 minutes
Makes  2 bowl

Ingredients  -

2 table spoon finely chopped ( shredded) cabbage
2 table spoon finely chopped  carrot cubes
2 table spoon  finely chopped  french  beans
2 table spoon  finely chopped  mushrooms ( cut  in  small  cubes)
1 table spoon  moong sprouts ( green  gram  sprouts)
2 table spoon  finely chopped  paneer (cut in cubes) (cottage cheese)
2 table spoon  finely chopped  spring  onions
1 table spoon  finely chopped  spring onions  whites
1 table spoon  finely chopped  beetroot cubes
1/4  tea  spoon finely chopped garlic (minched)
1/4 tea  spoon  finely chopped  ginger
Salt  to  taste
1/2 tea spoon  pepper  powder

A pinch of  ajinomoto  (mono  sodium  glutamate) (optional)

2 soup bowl of  vegetable  stock
2 table spoon  cornflour

( cornstarch)  should be diluted  in 1/2 bowl  of  vegetable stock.

2 table spoon  of  butter.
Some grated  processed cheese and cooked  veggies for  garnish



Method  -

*  Heat  butter  in  a  non  stick  deep  pan  / kadhai.

* Add  chopped  spring onions whites,  ginger and  garlic. Saute  for  a minute on  medium heat.

* Add chopped  cabbage, carrot, mushrooms,  french  beans  and beetroot. Saute  for  another  one  minute on medium heat.

* Add cornflour batter, salt, ajinomoto (msg) (optional)  and  cottages  cheese  (paneer).  Cook on medium heat  for 2-3 minutes,  while  stirring occasionally.

* Add  vegetable stock  and  cook  on medium heat for  another 3-4  minutes while  stirring occasionally . Add spring  onions  and  stir  for a few  seconds.

* Add pepper  powder. Mix  well.

* check the seasoning.

* Serve  hot, garnish with grated  processed cheese and  cooked  vegetables  and  few  spring  onions.


My mom  tips -

* Always  incorporate  fresh  vegetables  for making soup.  This  not  only  looks  good  but  healthy  too.  Soup  is  a very  easy healthier option  to  have nutrition  in our  meal.

* We use  ajinomoto in this  soup for the  taste. But, we recommend not  to  use ajinomoto  for health  concerns. You  can  skip  this  in  your  soup  recipe.

* Soup make  your  digestive system  stronger. It is a  very  good  appetiser.

Make  this healthier soup  for  your family and friends  and  enjoy  winter. Very  easy to make  and  full loads of  veggies.

New year sweet invitation - kesari paneer payasum (chennar payesh)

We (me and  my  mom) greeting  you a very
happy  new year  to  all of you. May god  bless you all.. A very  happy healthy and prosperous new  year .
Let's  make  a sweet  dish for  this new  year.
A sweet  gentle knock  with  sweet  surprise..
I want to start this day  with  sweet simple  easy  but  tasty recipe.
So,  we  have  decided  to  make yummy   bengali  mishti.

 Today , on the eve of  new  year we  are going to   make  Kesari  paneer  payasum(kheer)  (chennar  payesh)

Ya,
You  are  right.. I am  telling  about the very  popular bengali  sweet  dish... Chhenar  payesh.

 As we all know that  bengalis are  sweet  lover.. They  are  happy to  make  sweet  in their  special  occasions.  Bengali  cuisine  include  lot of  sweets.. (mishti). Most of them are  milk based and preparation with  chhena  (cottage  cheese.)


kesari  paneer payasum (kheer)  are made  with  cottage  cheese, milk and  condense milk dashed  with  lots of  nuts and royal  kesar (saffron). The rich royal kesari  flavoured  with  goodness  of  nuts  make  your  day  awesome.


Let's  be  with  me   and  enjoy  your  new  day  of  this  year  with  this  awesome  delicious  dessert.



Kesari paneer paaysum (chennar  payesh)

Preparation  time : 10-15 minutes
Cooking  time : 30-35 minutes
Serve for 4


Ingredients -

150 gram grated paneer  (cottage cheese)
1litre milk
6 table spoon  sugar
1/4 tin  or 1/2 cup  condense milk ( milkmaid nestle)
1/2 tea  spoon green  cardamom  powder
Few saffron  strands (kesar thread) soaked  in 1tbsp  warm  water.
1table spoon blanched  chopped pistachio (pista)
1 table spoon finely  chopped almonds
1 table spoon  finely  chopped  cashew nuts
For  garnishing -
A pinch  of saffron strands (soaked in 1tbsp  warm water)
Some  chopped  nuts


Method  -

*Bring the  milk  to  boil  in a broad heavy bottom  non  Stick pan. Simmer the  gas.
Allow  it  to  boil  on Simmer for  8-10 minutes, while  stirring  continously  and scrapping  the  sides  of the  pan till  the  volume of  milk  reduce  half  in  quantity.

* Add  grated  paneer,  sugar and  condense  milk.
* Cook  on  medium heat  for  3-4   minutes while  stirring  occasionally.

* Add  cardamom  powder,  soaked kesar  strands along with  water. Give  a gentle stir for  30  seconds. Mix  well. Remove  from the  flame.

* Allow  it  to  cool down  completely.  Refrigerate  for  atleast  1 hour.

*  Serve  chilled  and  garnish  with chopped pistachio , almonds, cashew nuts  and  soaked  saffron  strands.

My mom  tips -
* Use full  cream  milk and  condense  milk  for  rich  heavier  taste.
*How  to  blanched  nuts..
Just  boil the desired  nuts for 4-5 minutes on  medium  heat on a pan. Drain  the  excess  water  and  peel  the skin  of  nuts then finely  chopped  and  use  as  required.

Winter boon - Aloo methi greens bhaji






Hi,
Everyone,
In the series of  winter  boon.. Today I am sharing  you a recipe of aloo methi.. A perfect combination of health, nutrition  and taste.
Methi  leaves is  abundantly  found  in  market in winter.
So, this  recipe is a perfect combination  of  health and  nutrition.
Green methi leaves  tempered  with mustard  seed  and  jeera  in pure  ghee with spice of  green chillies  and  ginger make this  dish awesome in  taste.
Very  easy to make  and take less time.
Methi leaves is a power pack of vitamin k, iron , calcium, protein  and nicotinic  acid.
So,
Without  wasting of  time , I am  going to  share  you a richer healthier  methi  Aloo  bhaji.


Aloo methi greens bhaji

Preparation  time :15-20 minutes
Cooking  time : 10 minutes
Serve  for  3

Ingredients -

150 grams chopped blanched green  methi  leaves ( fenugreek  leaves)
250 grams boiled peeled potatoes  (cut in halves or  four)
2 table spoon  crushed ginger
1 table spoon crushed  green  chillies
1/2 tea  spoon  turmeric  powder  (haldi)
Salt  to  taste
1 table spoon  lemon  juice  or according  to  your  taste
Or
 1 tea  spoon amchur  powder
5 table spoon  melted  ghee

For  tempering -
1/4 tea  spoon  jeera seeds  (cumin  seeds )
1/4 tea  spoon  mustard  seeds

Method  -
* Heat  the ghee  in  a non  stick kadhai on medium  flame.
*Add  jeera  and  mustard  seeds. Let  them  crackle. It takes only 1/2 an minutes.
*Add   crushed ginger  and  green  chillies.  Saute  for  a minute on  medium  heat.
* Add  turmeric  powder, salt,  aloo (potatoes) and blanched  fenugreek  leaves . Stir for  a while. Cover it. Simmer  the  flame  and cook for 4  - 5 minutes, while  stirring  occasionally.
* Open  the lid,  add  lemon  juice or amchur powder.  Mix well and cook  for 30 seconds on  simmer heat.
* Aloo methi  is  ready  to  serve. Serve  hot  with  roti,  paratha,  naan.






My  mom  tips -

* For richer taste always  use  pure  ghee  for  making  aloo  methi bhaji.

* For  blanching  methi  leaves.. Just Wash  and  chopped  methi  leaves  and  boiled in  a water for  2-3 minutes. Drain  the  excess  water  and  keep  aside for  bhaji or  any  other preparation.

* Use Lemon  or  Amchur  powder to  cut  the  bitterness  of  methi  leaves.  It's  also  enhance  the taste  of  this  recipe.

winter boon - Green garlic chutney

Today , we  are  going to  share  very  tasty tangy  spicy healthy  green  garlic  chutney. Easy to  make..
Before  going to  share  the  recipe  details,
I just want to  share  the  health benefits of this  awesome  green spring garlic.
Green  spring of the garlic  is  technically  a garlic  contains amazing  health  benefits  just  like  mature  bulb.

Let  me  say first  that  one  should  eat  green  leafy  veggie of  any  veggies  because  it  contains chlorophyll which  helps  to  fight  cancer,  improve  liver detoxification, speed  up wound  healing, help in  digestion and  weight  control  and  good  for  skin.
 So,  please  include  lot of  green  in your  diet.

Green  spring garlic  health  benefits -

* it  has  immune  system boosting  quality.
* garlic  contains  allicin , the  sulphur  compound   is a natural  antibiotics  that  can  help  body  to  block  infections.
*  its  help  to  improve  iron  level  in body. So  beneficial  for  anemia too.
*Garlic  contains  polysulfied  help  protect  against  heart  disease.
*Garlic  rich  in magnese  that  is  good  for  HDL (good  cholesterol) .

 Green  spring  garlic  chutney  -

Method -


Hare lahsun  ki  chutney..

Preparations time. : 5 minutes
Cooking  time : 0 minutes


Ingredients  -
Green  garlic  (chopped) 100 grams
Green coriander  leaves  - 50grams
Green chillies  2
Salt 1tea spoon
Black salt  1tea spoon
Amchur  powder  1 table spoon
Or
Lemon juice  2 table  spoon

Method -
* Wash , clean  and chopped  fresh  green  garlic  and coriander  leaves.
* Put  all the  ingredients  in a grinder. Add 3-4 table spoon  of water.
*Grind all the ingredients  to fine  paste.
* Green  garlic  chutney  is  ready  to  serve. Use  as  required.
I recommend include l this  green  leafy garlic  in  your  winter meal  and  stay  healthy.

Lahsuni baby potatoes



Hi
Everyone,
Today I am going to share lahsuni baby pototoes ..
Very easy to  make and delicious too..
You can have this dish with roti or chawal.
This can be a side dish..
My mom always make it in morning breakfast with parathas...With curd..
Very simple but tasty .
Let's make it.. It can make within 10-12 minutes only.
Try ..
You will be happy to make it..

Lahsuni Aloo
Preparation time - 5 -7minutes
Cooking time- 10 to 12 minutes
Serve for 4 people


 Ingredient -
2 cup boiled baby potatoes (cut in halves or use as whole whatever you like)
2 tbsp garlic (lahsun) paste
½ tsp (haldi ) turmeric  powder
½ tsp red chilli powder
Salt to taste
6 tbsp of oil

For  garnish  -
1tbsp  of green  coriander leaves

 Method-
*Heat oil in a kadhai, add potatoes pieces and salt, mix well. Cover it by lid and cook on low flame for 4- 5 minutes or till the potatoes become tender or soft, while stirring occasionally.
*Open the lid. Add garlic paste, chili powder, turmeric powder, and mix well. *Cook on medium flame for 2 to 3 minutes or till the masala separates oil.
*Switch off the gas.
* Garnish  with  green  coriander  leaves.
*Serve hot with roti , paratha, naan.
I am sure that this dish will go with your breakfast and you will be happy to make it.


My mom tip -
* you can make it with large potatoes too.
But the taste is better when we use baby one. You can make with potatoes with skin also..for this do not boil ..just cut in half and follow above procedures.
Enjoy your breakfast with these yummy potatoes.

Tea time snack - crunchy crispy flaky methi mathri



Hello
Everyone ,
Welcome to our kitchen ..
Today we are going to share with all of you.. a simple salted craker snacks..which is very popular in northern india...
Flavoured with spices  kalongi ,pepper corn and kasuri methi enhance the taste this flaky snacks doubled.
People prepfer to have these mathris with mango pickle..or simply have with your tea..
You can make these crackers in a lots and store them in a air tight containers and used as required.
This will be fine with a month if u store in a air tight container.
Although it is made by refine flour (maida) only..but I prefer to make with half half..(half portion refine flour and half portion wheat flour)
 I am adding some spices too to enhance the taste of these flaky crispy snacks.



Mathris -

Ingredients -
1 cup wheat flour wheat atta)
1 cup refine flour (maida)
1/2 tsp kalongi (nigella seeds)
1 tsp crushed peeper corn
1tsp of kasuri methi
5-6 tbsp refine oil
Salt to taste
Water as required or approximately 1/2 to 3/4 cup
Oil for deep frying

Method -

* Seive wheat flour ,refine flour ,salt together . Keep aside.
*Add refine oil and rub with your palm for a minute ..mix gently.
* Add nagilla seeds (kalongi) ,crushed pepper corn and kasuri methi mix it well.
* Add little water at a time and start to knead  the dough. Sprinkle some water if needed. knead the dough very roughly.
*The dough should be hard or tight.
*Rest for 5 minutes and cover the dough with lid or cling film.
*Make a small size like ( tennis ball) from dough  and roll into a thick chapati  or puri about 3-4 inches in diameter.
Prick with the help of fork or knife on rolled puris.
*Prepare rest of them followed by same procedure.( mathris should be nor very thick or not  very thin)
*Heat some oil in a deep kadhai / or non stick pan.
*Put 4-5 mathris at a time in to oil.
Deep fry them on low heat for 5 minute.
In the mean time flip these mathris in every 1 minute until they turn golden brown in colour.
* Spread the fried mathris on kitchen towel or paper napkin so that napkin will soak all the excess oil from these  mathris.
*Likewise make all the mathris .
* Flaky tasty yummy salted indian biscuits are ready to eat.
You can serve them with evening tea or can have simply with pickles.
*Store them in a air tight container.

My mom tip -

* Mathri should be cooked on very low heat in a oil . In high heat they became browned very quickly from outside but do not get cooked from inside .
So, heat should be low for crunchy flaky mathris.

Janmashtami delight - creamy fruit custard





Happy janmashtami and welcome to our kitchen.
Today is janmashtami..everyone is celebrating lord Krishna birthday.  Many of us goes on fast on the eve of lord Krishna birthday....janmastami...Make this awesome fruity creamy delight on your fast.
Everyone know how to make friut custard because this is very well known by us...fruit with custard make this delight very healthy and delicious too.
Fruit custard is one those popular desserts
that people of all age group love to relish it.
This very awesome treat is generally served as a dessert. But you can serve during your fast and strengthen yourself with some  vitamins nourishment in your fasting.
I have make some variation ...i use fream cream and dry fruits to enhance the taste of this yummy delight. You can add lots of seasonal fruits and jelly of jam according to your taste.

Let's quickly gone through my way of making creamy fruit custard.



Creamy fruit custard-

Preparation time : 25- 30 minutes
Cooking time : 15-20 minutes
Serve 4-6

Ingredients -
Bananas 4 peeled and roughly chopped
Pears 1 medium finely chopped
Apple 1 medium finely chopped
Mango 1 medium peeled and roughly chopped
Grapes 150 grams cut in half each pearls
Pomegranate pearls 1/2 cup
Pistachios 2tbsp (blanched and finely chopped)
Almonds 2 tbsp (blanced and finely chopped)
Raisin 2 tbsp
Cashew nuts 2tbsp finely chopped
Custard powder 5-6 table spoons
Milk 1/2 llitre
Sugar 20 teaspoons or according to your taste
Fresh cream 1 cup
Some pistachios ( pista) ,almonds, cashew nuts, raisin and pomegranate pearls for garnishing


Method -

* Take custard powder in a bowl Add 1/4 cup of milk (not warm or lukewarm). Prefer cold milk or in with normal temperature. Mix well.
Make sure that there is no lump in your mixture.
Keep aside it.

* Heat non stick heavy bottom pan.
pour  gently rest of milk in a pan . Let it bring to boil. Simmer the heat .
Add gently and  very slowly custard milk mixture to the milk while stirring continuously.
(Stirring is must to avoid in making lumps in  milkly custard batter.)
(If you are not aware and not stir well while pouring/ adding custard slurry to the milk there shall be chance to make lumps in your milk custard mixture.

So, be sure the heat is slow and you are stirring the mixture continuously.

*Cook on slow heat for atleast 5 minutes or until mixtures is thicken while stirring continuously.
*Add sugar and cook for a while or till sugar melt.
Switch off the heat.

(Make sure that custard mixture is not  very thin or nor very thick.(If it's thicken after cooled add milk accordingly.)

*Beat with spoon or  hand beater till smooth.
*Let it cool down completely while stir occasionally.
*once it cooled add chopped fruits and dry fruits and fresh cream to the custard mixture. Mix well.
*chilled in a refrigerator for an hour.
*Garnish with some fry fruits and pomegranate pearls .serve chilled.

Fruit delight - Aam ras



Aam ras

Hi ,
Everyone..
Rainy season comes with showers of water with lots of fruity delights.
When summer shower with pleasnt water we feel craving of some sweet chilled delight in our meal.
Today, I am sharing with all of you a famous gujrati sweet delight...aam ras.
This is one of my favourite dish.
As sound by its name aam ras mean mango juice.
Aam ras is very popular in gujrat and Maharashtra.
They generally use alphanso mangoes to make this very special dessert.
But I use langda malda to make my sweet mango dessert.
Just make sure that mango shouldn't be very fibrous. It should be pulpy ,fleshy and fully ripen.
It is very easy to make and no fire recipe.It takes only couple of minutes to make it.

Before going to share the recipe ,I just want to say that traditionally it is serve with pooris.
But aam ras can also  be used as a dessert or sweet dish after meal.
Which way suit you ..you can follow..in any time this will be super super awesome and make your time delicious.

Here ,I am going to share with all of you a quick no fire very simple recipe of awesome aam ras.


Preparation time -15-20 minutes
Cooking time - 0 minutes
Makes 1 large bowl

Ingredients -
2 large ripen mangoes ( prefer  fleshy mangoes like langda malda or alphanso variety of mango)
1 pinch of saffron strands (thread of kesar)(soaked in 2 tbsp of  lukewarm water )
1pinch of saffron strand for garnishing
1 tbsp of chopped pistachios for garnishing
A pinch of cardamom powder
1/2 cup of powdered sugar or according to the sweetness of mangoes
1/4 cup of milk
1 cup of fresh cream (prefer low fat cream )

Method -

* Rinse or wash the mangoes with water.
Then after peel gently and cut into in small cubes.
*Blend the mangoes cubes in a blender to smooth puree along with sugar , cardamom powder and 1/4 cup of milk or according to te thickness of puree.(the puree should be nor  very thick or not very thin.Take it in a bowl .
*Add fresh cream and 1 pinch of saffron strand. Stir well.
* pour in a serving bowl  and garnish with saffron strands and chopped pistachios. Chill in the refrigerator for an hour.

* Awesome aam ras is ready to eat.
Serve with pooris/ chapati or have as a dessert after meal.

Tamarind or imli is well known for its health benefits.
It is a good source of potassium , magnesium fibre and vitamins.
A very good source of vitamin C. Vitamin E, calcium and iron.
Tamarind is very helpful to lowering the blood cholesterol and promoting good and healthy heart.
It is very good for reducing inflammation, improve eye health, boost up respiratory health, heal skin condition, treat piles, prevent from cancer,helpful to improve in digestive system and  strengthen the immune system.
Tamarind is sweet and sour fruit has brown shell covering with sticky,fleshy, juicy pulp.
Tamarind has very healing effect in heat stroke.
It has tremendous value in fighting the sun stroke.
Imli efficacy is to cool your bdy and protect from summer heat and sun stroke.

Cocktail of tamarind juice is extremely beneficial. So, I am here with healthy Indian version of cocktail...
So, this summer try out desi heat cooler  instead of soda or any market bought carbohydrate cold drink.
Quench your thirst with desi imli tamarind  cooler  drink and beat the sun stroke naturally.


 Tamarind (Imli) cooler drink -


Tamarind cooler drink -

Preparation time : 1/2 an hour
Cooking time : 3-4 minutes
Serve 2 glasses

Ingredients -
1/4 cup of tamarind ( imli)
1/2 cup of warm water
8 tbsp of sugar (or as required according to sourness of tamarind)
1tsp of jeera powder (cumin seed powder)
1/2 tsp of black salt (  or according to your taste)
1/4 tsp of common salt
1/4 tsp freshly grounded black pepper (optional )
1tsp of lemon juice
2 glasses of cold water
Some ice cubes
Fresh mint sprig for garnishing


Method -

*Combine 1/4 cup of tamarind and 1/2cup of warm water in bowl.
Mix well, keep aside to soak for half an  hour.
*After 1/2 an hour squeeze out the pulp from soaked tamarind using your hand.
*Strain the tamarind pulp using a strainer or fine seive.
*Strain the concentrated pulp through 2 time more in tea stainer or fine muslin cloth to remove the wastage of tamarind.
*keep aside the paste.
*Heat the saucepan on medium heat add tamarind pulp,sugar and 1/2 glass of water. Let it boil for a 2-3 minutes while stirring occasionally.
*Take off the heat,let it cool down completely.
*Add lemon juice,cumin powder(jeera),black salt,salt and 1 1/2 glasses of cold water.
*Check the consistency  or thickness and sugar salt propotion.
*If required add accordingly.
*Pour in to a glass filled with lots of ice cubes.
*Garnish with mint sprig.
Sweet and sour tasty tamarind cooler is ready to serve. Serve immediately.

Beat the heat of summer - sattu drink (namkeen )

Everyone,
Welcome to our kitchen. Today we are going to share with all of you a very refreshing drink- sattu  drink a very popular traditional summer drink  of Bihar and jharkhand as well as UP too.
Easily available at any departmental store.
If it is not available there , I am going to share in mom tips section how to make sattu at home in a easy way.


Sattu is originally made from roasted gram flour has immense health benefits.
Full of nutrition with cooling  properties rich in soluble fibre..very good source of protein and good for digestive system.
Because of its low glycemic index it is suitable and diabetic friendly.
This is also considered as a detox food that cleanse the body and aids in weight loss.

It's help to flush out the oil  consumed in diet.
It is better than any other cold drink because it is assimilated by the body easily and energies  and refresh the body immediately after the consumption.
Very good refreshing drink for instant energy.
As it is a good source of protein ,so it is very healthy for growing children's.
Daily consumption of sattu help to glow your skin.
So,
Go ahead, with sattu drinks and refresh yourself in this hot summer days.
There are two versions of sattu drink - sweet and savoury.. (Meetha and namkeen )
I am going to share a namkin version of making sattu drink.



Sattu drink (Namkeen)

Preparation time : 10 minute
Cooking time : 0 minutes
Serve 2

Ingredients -
4 tbsp of sattu flour ( channa ka sattu)
2 tbsp of lemon juice ( or as per your taste)
1/4 tsp of black salt
1/2 tbsp of roasted cumin powder.
1/4 tsp of salt ( or as per taste)
Some sprig of mint. ( mint leaves or pudina)
2 tbsp of  finely chopped onions
2 glass of water
Some ice cubes

Method -

* Take a pot add sattu flour, salt ,black salt  and water. mix well.
*Add lemon juice , roasted cumin powder and mix well.
Make sure that there is no lumps in the water mixture.
Check the consistency.It should be nor thick or not thin. Add finely chopped onions .
*Pour in to glasses add ice cubes and garnish with lemon ring and mint leaves and pinch of jeera powder or chaat masala powder.
Serve immediately.


My mom tips -
*you can use chaat masala powder or jaljeera  masala powder  instead of roasted cumin powder.
*Adjust salt, spices and lemon as per your taste.
But roasted jeera powder  are found in almost every kitchen. So it is convenient to use roasted jeera powder.
(You can make easily in a minute. Just roast the cumin for 2-3 minutes and cool for a minute and grind in the grinder). That's all. Roasted  cumin powder is ready to use. Use as required.. In dahi bhalla , raita or any dishes.
*If you want to make channa sattu at home then follow my simple method of man ng sattu at home.
*just bought some roasted  channa (without skin) at any departmental or grocery store.
Heat the pan and add roasted channa on medium heat for 3-4 minutes while stirring constantly.
Allow it to cool and grind to fine powder.
Seive in a stainer.
Home made sattu is ready to use.
This is a very easy way out of making sattu at home.
I am sure that you will make and enjoy this summer with this savoury salty refreshing drink.

Beat the heat of summer - Aam paana



Hello,
Everyone.

Welcome to our kitchen.
Today we are going to share here a beverage  a well known for its  heat  resistantant properties.

Prepared with raw green mangoes ,sugar and spices. Consumed as a healthy and very very tasty beverage to fight against summer stroke.

In Indian culture  it is usually consumed by every family in summer.
It is a perfect cooled beverage to beat the heat of summer.

It's  quenches thirst and prevent excessive loss of sodium chloride and zinc from our body due to excessive sweating.

It's  a very good source vitamin C , vitamin B1, vitamin B2,niacin .
Curative for blood disorder and gastrointestinal disorder.
Because it's contain vitaminC is a rich in anti oxidant which help to fight against cancer.
So, the super cooler drink aam panna is not only tasty but it has some very essential health benefits.

People make this drink as different ways..

Some make by roasting green mangoes in gas flame until tender inside and then peeled the skin and use the pulp of its for preparing panna.

Some are use to boil in pressures cooker and the peel off the skin of mangoes and use the pulp as required.

Both of the methods are right.. You can use any of them as according to your preference.

Let's make the way I make it..
Note down the right recipe here.

Aam panna -




Preparation time : 10-15
Cooking time  : 6-10 minutes
Serve 2 glasses


Ingredients -

1 medium size green raw mangoes or  1/2 cup cooked raw manogo pulp.
1cup or 10 tbsp of sugar or as per sourness of the mango
1 tsp of roasted cumin seeds powdered
1tsp Black salt ( kala namak) or as per taste
Salt to taste
10-15 mint sprig ( leaves)
Mint leaves and mango pieces for garnish
Cold water as required. ( approximately 2 glasses)
Ice cubes


Method -

*Wash and boil the mangoes in pressure cooker or any utensil on medium heat for at least 5-7 minutes  using 11/2 cup of water or until it's tender inside.

Let them cool and peel the skin of mangoes and mash and pass the mixture through seive.
Puree in a blender with mint leaves (pudina) to a smooth paste.
*Add cumin seeds, black salt ,common salt and sugar. Mix well till sugar dissolves.
Keep aside in refrigerator to chill it.

*Add chilled water as required to dilute the paste as per your taste.
Use more or less amount of water according to your taste.
If you want some thick drink use less amount of water , if you want thin drink use more amount of water for preparing panna.

*pour into in tall glasses  add ice cubes

*Garnish with mint leaves and mango pieces.

*serve chilled.
Healthy super heat resistant cooler  is ready to sip.


My mom tips -

*Use less or more sugar according to the sournress of mango pulp.
If needed more sugar add accordingly.
*Use roasted cumin powder and black salt as per your taste.
If you like more cumin seeds powder use as per your taste.
*you can  ditectly roast green mango in  on gas stove fire on medium heat untill it become tender. Cool down completely and peel off the skin and use the mangoes pulp as required.
Roasting in a fire gives panna a smoky flavour taste.
