Laziz Aloo tikkis--- the real joy of taste

I am here, again with delicious aloo tikkis . ya, my bro favourite aloo tikki.. Sharing  all of you a simple but awesome  one.


I believe that snack with aloo is always be a good option.
Because it's take less  cooking time and easily available  in any one kitchen.
Aloo preparations  is always kids fab too.


Eat aloo tikki with in chaat preparation or simply have with chutney --taste  super awesome. 


As a snack aloo tikkis are always be a rock and every one favourite.
I  am making this tikki using ghee-- you can make in any vegetable oil according to your taste.


I prefer shallow fry for seeking healthy version. You can deep fry this. But before  deep frying this ,use maida - water mixture batter for dipping it and then roll out each tikkis in bread crumbs . after that deep fry these  tikkis and taste the  super tasty aloos tikkis and make ur day really delicious.


Make these  tikkis for your  guest and  I am sure after eating these tikkis you will certainly enjoy the delicious comments from them.
Before making the tikkis ,I want to share the a little goodness of aloo .




*Aloo is very good source of potassium, that help to reduce the blood pressure level.
so guys, don't waste time -- quickly, write down the super easy and tasty tikki recipe  and enjoy the real joy of taste.






Aloo tikki



Preparation Time-12minutes
Cooking time- 10-12 minutes
Makes 6 tikkis



Ingredients-


2 cup boiled peeled and mashed or grated potatoes)

1 tbsp grated ginger (adrak)

1 tsp very finely chopped green chillies

3 tbsp very finely chopped onions

½ tsp turmeric powder (haldi)

1 tsp- garam masala powder

3 tsp of ghee

2 tsp amchur powder (dried mango powder)  or according to your taste

3  medium size bread  slice ( cut the brown edges and soaked in water then squeeze out the excess water)

2 tbsp of corn floor for dusting the tikkis

Ghee for shallow fry

Salt to taste



Method--



*Heat 3 tsp of ghee   in a non stick pan or kadhai.

*Add   ginger, green   chillies, sauté on medium flame for few seconds.

*Add   onions   and sauté on medium flame for 2 minutes.

*Add turmeric powder, garam masala powder, amchur powder salt and sauté on simmer for 1 minute.

*Add   potatoes  Saute   on medium flame for 1 minutes, while stirring continuously.

*Switch off the gas and allow it to cool completely.

*Once cool add  3 soaked and squeeze bread slices.

*Mix well.

*Divide the mixture in to 6 equal portions.

*Shape each portion in like a peda (tikki)  or leaf like shape, according to your preference or taste.

* Dust each tikki with cornfloor. And keep aside for 10  minutes in a refrigerator.
(Freeze)

*Heat the broad non stick pan  on medium flame.

*Add 5-6 tbsp of ghee .Place each of tikkis gently on pan.

*Shallow fry them on medium heat till they golden brown in colour from all the sides .

*Serve hot with (dhania) coriander  chutney or tomato ketchup and (onion cucumber rings--dipped in lemon juice) and enjoy this awesome tikkis.




My mom tips--

* Use less amount of water ,while  boiling the aloos (potatoes) in pressure cooker--because it will take less time to cook.

Example- For 4-5 aloos --use 2 cup of water and pressure cook for 1 or 2 whistle according to the  quality of pressure cooker and company.

So friend, use less amount of water for boiling the aloos  and save gas.

*Adding bread crumbs is must for making tikki , cause it help the potatoes to bind.

* Rolling the tikkis in confloor and resting in refrigerator is must, cause  doing this  help tikkis to bind  and shape and help  not  to stick on pan while shallow frying it and help to maintain a awesome look (golden brown) in colour.
Always maintain medium heat while shallow  frying.


* Use ghee for shallow frying. It will taste  delicious and richer.

Archana , here .with sweet awesome coconut ladoos. Ya , I am sharing u,  my friend rano's favourite ladoos..that I  have made in Diwali puja special. This ladoos are made with fresh coconut.  Juicy, creamy, texture of this yummy sweet , tempt us to eat more and more. Cooking this mithai is not very hardsome but scraping the coconut is quite tough,but not impossible. So the prep is tedious, but cooking time is very less than other mithai's. Here, I am sharing all of you, mouth melting sweet awesome coconut ladoos.  If you don't want to scrap the coconut , use desicated coconut  powder for this preparation.

Quickly, note down the right recipe here..hope you all  will enjoy the mouthwatering ladoos and want to make more times , and make your day really awesome.


Sharing coconut ladoos...because we believe that sharing  help us  to grow and learn..




 Kesari Coconut Ladoo



Preparation time: 25minutes
Cooking time: 15  -20 minutes
Makes 20 Ladoo





Ingredient--

1 can condensed milk

½ cup milk

2 1/2 cup ( scrapped  fresh coconut ) or  grated in fine grater after peeling the skin

20 tbsp desiccated coconut powder 

8 tbsp powdered sugar

10 -12 saffron strands (kesar thread)

4 tbsp lukewarm water for dipping the saffron string

For garnish----

2 tbsp finely chopped blanched pista( pistachio)






Method-----


*Combine lukewarm water and saffron in a bowl. Keep aside for 15 minutes. 

*Heat milk in a kadhai, add  scrap fresh  coconut powder and condensed milk . Mix well with the help of ladle.

*Cook on medium heat for 10 -12 minutes on medium to low heat  or until the mixture become semi thick or leave the corner of kadhai, while stirring occasionally. 

*Add powdered sugar, mix well.   Cook for a minute.

*Switch off the gas.

*Let them cool. 

*When the mixture become cool, divide 20 equal portion of the mixture and make ladoo with the help of your palm.

*Roll each ladoo in a desiccated coconut powder that the coconut powder becomes evenly  coated from all the sides of the ladoo . 

*If you want  to decorate this ladoo..follow me..

Take  one  coconut ball in your palm, and make  light press on the centre of ladoo with the help of your finger and pour  1-2 drop of saffron  water on it.

Likewise make all of them,then Garnish  each of them with pista.

*Store in a container.

*Serve  as required, and enjoy very tasty , yummy ladoo's with ur family and friends. I am  sure, after eating these ladoo's ,they will  honor you the title of best chef of world.





*My mom tip...

*You can use dedicated coconut, if you don't want scraping fresh coconut. But if you want awesome result, make  it the way that I am suggesting you.

*Rolling  coconut ball in the dedicated coconut powder is must. Because it help to bind the ladoos and it's look awesome, just like shop bought  coconut mithai.

* desicated coconut is easy available at any grocery store. (Also called coconut powder --in local language)

Hi guys,

               We are here with  our simple and tasty...evening bite. Ya ,you are right .I am tell about the cheesey methi aloo tikki.Have u ever tried. Methi with cheese. No ..na.!  I know you must be thinking that what a wrong combination...   Hahaha. Not joking ...yes , I have tried  and tested.. Methi  leaf with combination of aloo become very good in taste..with cheese, it become superb . Believe me , it gonna super tasty...ya sure...try  this !

I am going to share with u... You  must be thinking na..methi..the bitter taste, and aloo cheese and ghee .... Fat?  Don't think the negative aspects of food before knowing their goodness.... People thinks these are evelvate the fat growing process ....but think the positive side of these food..

 Before making any conclusion, let me  share some goodness of  these ingredients.


* Methi( fenugreek)...

 It's reduce cholesterol... Ultimately prevent cardiovascular disease.
*It relieve constipation because of it's dietry fiber... Rich in protein, magnesium, copperand iron.
* It's help to  control diabetes.
*prevent Colon cancer.
*increase breast milk  production in breast feeding women.
* aids  digestion and appetite suppressant..  Ultimately help to facilitate weight loss.

Ghee---

Do not bother...know the goodness of ghee---


*It's strengthen the immune system. (Immune system play  key role in our health..if our immune system is boosted ,we need not worry about any infections  that we are getting infected our day to day life.. Boosted immunity make our body to fight against any disease.
*It's boost the metabolism.. Do not surprised? Ya ...that why  help to reduce the weight gain.
*Great for our skin,prevent aging.
*Enhance and improve the eyesight ( prevent cataract)
*Full of vitamin A, D ,E ,k.
*Ghee contain arachidonic acid that are important for development and function of brain.that is why consumption if ghee make u intelligent and increase the memory.
*Ghee contain CLA - conjugated linoleic acid--strong anti cancer.
* ghee improve HDL level , which is very good for cardiac health.


Cheese---

* It is very good source of calcium, protein, zinc, vitamin A and vitamin B12.


So, these are pretty goodness of these products., but healthy if you  consume in a moderate and balanced way.

If you use ,one meal with ghee and cheese ,skip 2 days without these ingredients in your diet.

Excees  of anything always injurious for our health

Consume according to your metabolism, but don't compromise on taste.

That is why ,I am here with ..this yummy snack for your evening.

Preparation Time-12minutes
Cooking time-12 minutes
Makes 6 tikkis




Ingredients----


2 cup boiled peeled and mashed ( grated)potatoes

1/4 cup finely chopped fenugreek leaves (methi leaves) ,rub 2 pinch of salt for reducing  bitter of methi leaf.  Keep aside for 2 minute, then squeeze out the bitterness of methi.

1 tbsp grated ginger (adrak)

1 tsp very finely chopped green chillies

3 tbsp finely chopped onions

½ tsp turmeric powder (haldi)

1 tsp- garam masala powder

3 tsp of ghee

1tsp amchur powder (dried mango powder) or chaat masala

3 bread ( cut the edges with help of knife and soaked in water then squeeze out the excess water)

 3 tbsp Ghee for shallow fry

2-3 tsp  of refine flour ( maida) for dusting the tikki.

Salt to taste


Mehod----


*Heat 3 tsp of ghee   in a non stick pan.

*Add   ginger, green   chillies, sauté on medium flame for few seconds.

*Add   onions   and sauté on medium flame for 2 minutes.

*Add turmeric powder, garam masala powder, amchur powder   or( chaat masala) and  salt.

*Sauté on simmer for 1 minute.

*Add   fenugreek   leaves   ( methi  ) sauté  on medium flame for another 1 minutes.

*Add    madhed potatoes  Saute   on medium flame for 1 minutes, while stirring      continuously.

*Switch off the gas and allow it to cool completely.

* Onced cool add   3  soaked and sqeezed breads.

*Mix well. Divide the mixture in to 6 equal portions.

*Shape each portion in like a peda (tikki) .

*Take one peda or ball in  your palm, make  katori like shape with the help of your finger.
*Stuff a little amount of cheese in the aloo katori, then seal the edges with aloo mixture          and make roundel. Make sure that cheese is fully covered by the allo mixture, otherwise,        in the time of frying , they will come out...and stick in bottom of pan.

*Dust this ball  in a  refine flour ( maida).

Place each of tikkis gently on pan.

*Shallow fry them till they golden brown in colour from all the sides .


*Serve hot with dhania chutney or tomato ketchup.

cool boon apples---- Apple cinnamon milkshake

Archana, here again, with something sweet, richer, healthier and  off course tasty too.  Simple  ,easy ----no cooking recipe.

Yesterday ,I went to the market and bought some fresh apples. My mamma is very fond of apples. So ,I have decided to make something healthier and tasty recipe for her with these apples.., which I am  going to share with all of you guys.


yes, I am telling about Apple cinnamon milkshake---- A healthier version of milkshake .

 A perfect combination of  nutrition and taste. In this recipe ,I use apples, banana, cinnamon, honey and ice cream. Except ice cream , all the ingredients are very beneficial for our health.

Before going through the recipe here, let's quickly  watch the nutrition values of these ingredients.

*Apple---
You know , It is rightly said that...." An apple a day keeps you doctor away".

Apples are not only help to increase haemoglobin but extremely rich for his antioxidants, flavoniods and dietry  fiber.
Fiber help to cope with constipation.
The phytonutrient  and antioxidants  in apples make them different from other healthy fruits. Because , it may help to reduce the risk of cancer, hypertension, diabetes and heart disease.

*Banana--

Banana is also known for its value for energy booster fruit.
Banana are also very beneficial to improve hemoglobin ,because its contain folic acid. Not only that ,bananas are high in potassium, that help to reduce hypertension, that are officially recognized by FDA for being able to lower the pressure of blood and protect against heart disease and stroke.

Very few people know that the fact about the banana has potential to overcome depression.
Banana help to  overcome with depression, due to high level of  tryptophan, which convert in a serotonin.

Apple cinnamon milkshake---


Preparation time: 10 minutes
Cooking time: 0 minutes
Making time: 2 -3 minutes
Serve for 2 glasses


Ingredients--

*2 cup peeled and finely chopped apples

* 1 medium banana ( approx 1 cup) finely chopped

* 1 tbsp( table spoon) sugar free

*1 tbsp of honey

* 2 cup chilled milk

* 1/2 tbsp cinnamon powder

*2 scoop of vanilla ice cream ( approx 1 1/2 cup)

* A pinch of cinnamon powder and 1/2 tbsp of honey  and some pieces of apples for topping.




Method-



* Take chopped apples, banana and sugar free  in a blender.
* Blend in to a blender to a smooth puree.
*Add  chilled milk,cinnamon powder, honey, and  ice creamand blend it again for a minute.
*pour into a 2 individual glasses.
*Top with a pinch of cinnamon powder,honey and apple pieces
* serve immediately.

Royal real sweet treat --- indian delicacies -- The royal kesari jalebi


Hi everyone,

A warm welcome to our kitchen.

                          We are here, with our recipes.... Let's start with jalebi....


A sweet start with sweet jalebies....

Everybody knows  jalebies are delicacies of Indian dessert.... It is popular for it's  juicy, crispy  and crunchy  texture .

 A morning breakfast with sweet jalebies makes our day sweet and delightful... We all love to eat jalebies ...but do not know ,how to preparare this......awesome jalebies .


Come..
 let's make kesari  jalebies ....

 The secret of halwai's jalebies... A sweety, crunchy and crispy  that I have learnt by the chef  in my brother's marriage ceremony...
 I want to share  with all of you.  We have made some changes/ variation on it...according to our taste.. And health point of view.

They use food colour....but I prefer to use saffron strand for kesari colour..  This make our recipe rich and royal......

They made jalebies for the occasion.  These are very tasty and delicious...



 This is simple but little bit triky recipe....Before  meeting to him , I know, how to make jalebies... But something missed by me.... I was trying by adding..hydro, or baking soda but the result was not satisfying.....


 Traditional and authentic jalebies are made from only refine flour or maida and sugar only... Authentic recipe does not need such ingredients like meetha soda or hydro.


But you have to preparare for it,  a day before( 24 hours)  .


Make refine flour batter a days before you want to preparare. Jalebies...

Let it, fermentate for 24 hours in warm place.... Then make jalebies  with this batter... Very simple.. You might be thinking  that how can it be crisp and juicy, but with these simple ingredients.. Ya... Sure..100% !

Believe me...and follow my suggestions before making jalebi... Some trick and tips.. It gonna awesome.


 Here I shall show you the details of this recipe .


Let's start... Making halwai's secret ...authentic  and traditional jalebies...and make your day awesome and memorable.

                                                                                    Kesari jalebi


Preparation time: 24 hours
Cooking time: 20- 25 minutes
Serve for 4-5


Ingredients-

2 cup sugar( chini)
11/2 cup  refine flour + 3 table spoons refine flour (maida)
1 lemon  (nimbu) ,cut into a wedges or cut in 4 small pieces or 4-5 teaspoon milk( this is for cleaning the sugar.)( for cleaning the sugar syrup)
A few saffron strands( kesar)
Ghee for frying
Chopped pistachio ( pista) for garnish

 (If you  don't have  saffron use good brand of kesari food colour)




Preparation: A day before  cooking..


*Place  1 1/2 cup of  refine flour ( maida) in a bowl and add  1 1/2 cup of water( equal quantity)  and beat continuously with your hand ( palm) for 20 -22 minutes to make this batter light , smooth and lumpfree. The consistency should be  not very thick or nor very thin.

*Beating the mixture is must... Because it's  incorporate air in it  and   generate a temperature in the batter. ------This is my first tip before making jalebies .

*Cover the bowl and keep in a warm place to fermentate for 24 hours.


*Cooking day--- Let us start with sugar syrup--

*For  sugar syrup-

*Method-

*Heat the pan/ non stick pan  on medium flame.

*Add 2 cups sugar with 2 cups of water ( equal quantity) ,stirr continuously . cook the sugar water mixture on medium flame for 2-3 minutes or till the sugar dissolves.

* Add lemon wedges ( piece) or milk .cook  on medium heat  for1 minute or bring to boil.

Reduce the heat . collect the scum( dirt)  from sugar syrup, with the help of ladle and discard them.

*Stirr continuously till the sugar syrup attains one string consistency.

* Add saffron strings on sugar syrup. Stirr well .cook for a minute.
Keep aside the syrup...



*For jalebies--


Method-

* Take the fermentated   batter. After 24 hours ,you will find the mixture became  fluffy and you will find air bubbles in it. They looks some how  slight thin in  consistency.

Add  3-4 table spoon of refine flour ( maida) and whisk it well for 5-7  minutes.
Adding refine flour this time is necessary.. Because the should be pouring in consistency. Not very thin nor very thin...perfect for jalebi making...

This is my second tip...because in making jalebi consistency and thickness are very important.

*Make sure that there is no lumps in the batter. The batter should be in  pouring consistency.


*Heat the ghee  on medium heat on low bootom flat surface  non stick   frying  pan. Pour some amount of batter in to a squeeze  bottle ( ketchup bottle)/ icing bag/ ziplog bag.


*Hold the bottle over the ghee on pan and gentlely squeeze the batter in to the ghee in  spiral shape/ circular shape. ( jalebi shape).

 *Make 5-6 jalebies in a one batch.

*Cook the jalebies  on medium to low heat.

* Turn the jalebies occasionally .


*Cook for at least 3-4  minutes on each  sides or till it becomes pink or light golden colour and crisp .

*Once it cooked , pick it with the help of tong / laddle.


*Drain the excess ghee  .


*Dip  immediately  in the  sugar syrup .


(  Be sure  that sugar syrup should be lukewarm in temperature). ---

*My third tip...sugar syrup should be be lukewarm in temperature, otherwise  jalebi will not soak properly sugar syrup..

Tt is very important for jalebi should soak syrup..for goodness and richer taste , this is essential.


*Soak it for 2-3 minutes. Pick out these jalebies on plate.



* Likewise  make all the jalebies.


* Garnish with some chopped pistachio ( pista).


* serve hot and enjoy  the awesome jalebies---The delicacies of Indian dessert and make your sweet and memorable.


My mom tips--

*you can make instant jalebi by yeast or metha soda(khaney ka soda- soda     bicarbonate).
If you are using meetha soda (soda bicarbonate-- Use 1/2 tsp of meetha soda for1and 1/2 cup of maida(refine flour) only not more than that. Add  enough water  to make a batter .Make sure that the batter should be not very thin nor very thick.It should be pouring/ dropping consistency .Then stir well. And rest it for 4-5 hours in a warm place then make jalebi with above written procedure.


(If you are using yeast then use 1/2 tsp of yeast for 1and 1/2 cup of maida.Make sure that you are soaked yeast in a lukewarm water for at least 10 minutes and  make batter by adding enough water. Rest it for  alleadt 4-5 hours. Then follow above procedure for making jalebies.
                                 But

I have a suggestion for you..do not follow the instant methods for crispy juicy authentic jalebies. Because authentic jalebi needs adequate fermentation for its crispy juicy texture.
So, Make jalebi If you have enough preparation time for it.

Note-
( Do not make jalebies in hurry.. Have patience and give more time to fermentate the batter in a warm place)

Note-
*1----- How to check the sugar syrup consistency...
  string---

Take a drop of sugar syrup in a plate. Rest it for 30 seconds. Use your thumb together to pick this drop.

Place the drop of sugar syrup between your  thumb and finger tip.

Stretch finger and thumb apart to about 1 centimeter  If you see 1 string ( taar) , then chasini is ready to use .It looks like a honey in texture. If not , cook for a minute and then check the string consistency.


* 2---- If you haven't a ketchup  bottle/ sauce dispenser, then  make a cone using  thick plastic sheet... ( you can use milk pouch/ thick sheet plastic bag  ir iciing bag for it or old unused thick cotton cloth(  pant or thick bedsheet)
Use plastic ketchup bottle  for better results... These are easily available in untensil shop at market.

* 3-----How to make jalebi shape----

I prefer  starting from innerside and work outward for  making spiral shape... You can make with your own  preferences... IT is simple - By  exercising  2-3 times for  making the shapes...you will be comfortable in making the jalebi shapes.


* Use tong for flipping the jalebies while  frying it.
It will give you better result.

* Use saffron instead of colour... Be health conscious  accepting saffron for colouring
 your recipe.

I believe that life has so many taste--- sweet, sour ,bitter and more...with so many colours..... Just like our cooking journey... Every person wants to cook their  own way of cooking, but if u want to share our experiences to other people that give us opportunity to grow and learn ...

Before going to share our recipes---- I want to introduce ourselves...As I said , we are Maa Beti ki Jodi...Asha -- my mom and myself Archana...

My mom is my mentor,teacher, guide,friend and much more  than these words can says....she has very simple ,calm, generous, studious ,dedicated personality.... She enjoy each and every moments of life...I always want to follow her life mantra-----NEVER GIVE UP...

 I believe in  6C formula.... That I have made for myself...

1--C-- courage... .Be courageous ...
2--C--confidence--- courage give us confidence to  do things better.
3--C-- challenge..... Take the work as a challenge.
4--C---committment.... If u committ ...then you must have passion  for your commitment.
5--C---control..control yourself , whenever needed in your life.
6--C---conviction... Have firm  conviction..with positive attitude.
  
And lastly , I want to say....Don't look your struggles as obstacles.....look at your struggle as opportunities to learn and grow...

Then give to the world the BEST you have, and the BEST   will come back to you...
Even in cooking too... That is why we are here to share our cooking experiences to all of you.
